商品説明名称天然鮎 商品説明 世界文化遺産に登録される白川郷を流れる庄川で漁獲された天然鮎です。 白川郷を囲む白山麓から、雪解け水と共に、ブナ林の栄養分がたっぷりと庄川に流れ込みます。 川の石にはアユの好む良質な藻が育ち、アユはたくさんの藻を食べて短い夏の間に急成長します。 庄川は100km以上の流程がありますが、白川郷で漁獲される天然アユは、焼き上げると身がふっくらと柔らかいことに加え、脂が乗っており濃厚な味わいであることが特徴です。 岐阜県の庄川漁協管内で漁獲された天然鮎は、全国清流めぐり利き鮎会で過去に2度の準グランプリに選ばれており、アユの姿かたち、味の良さはとても優れています。市場には一切流通しない白川郷の天然鮎をぜひご賞味ください。 庄川漁協の組合員が1匹1匹丁寧に釣り上げた天然鮎の中から、18cm以上の塩焼きに適したサイズのみを厳選しました。 釣り上げられたアユの休息と、お腹の内容物の排泄を促すために、一晩水槽の中で泳がせています。翌朝に水槽からアユを取り上げ、氷締めをした後に、15分以内に1匹ずつ真空パックされ、急速冷凍されます。とにかく鮮度がよいため、袋から取り出した
